- 2 tablespoons light olive oil
- Salt and freshly ground pepper (to taste)
- 3 – 4 ripe Del Monte® Hass avocados, peeled, pitted and diced
- 1 Del Monte® red onion, finely diced
- 1 Del Monte® tomato, finely diced
- 1 can whole kernel corn
- 1 Del Monte® lime, juiced (add more if desired or necessary)
- 1/4 cup chopped cilantro leaves
- 1 clove of garlic, minced
Mash diced avocados in a large bowl.
Add the remaining ingredients and season with salt and pepper.
Serve with blue, yellow and white corn chips.
